Actually saw two.  Third day on the road, heading out of Santa Fe, and out on the west side of town I spied a red Lotus Esprit pulling into a gas station.  Unfortunately, I wasn’t in a position to get the car turned around for a photo, rats.

But wait!  On Cerrillos Road (US 84/US 285) heading south towards I-25, an Austin-Healey 3000 Mk3 (?) passed us on the right.  The Bride of Morganstein quickly grabbed a shot using her cell phone (which, truth be known, came out better than my photo with the SLR), so here it is.
